Induction Cooking India: Power Demand Implications

Context:

Bureau of Energy Efficiency has indicated that rising adoption of induction-based cooking could increase electricity demand by 13–27 GW at the distribution level. This shift is linked to concerns over LPG supply and changing household energy consumption patterns.

Induction Cooking India: Power Demand Implications
  • Induction in induction cooking is a process that uses electromagnetism to heat cookware directly rather than relying on thermal conduction from a flame or burner.
  • A copper coil beneath the cooktop surface generates a high-frequency alternating magnetic field, which induces electric currents (called eddy currents) directly into magnetic cookware, causing it to heat up instantly.
How Induction cooking Works:
(Induction Cooking India: Power Demand Implications)

How Induction Works:

  • Electromagnetic Field: When turned on, electricity passes through a copper coil, creating a magnetic field.
  • Inducing Heat: When a ferromagnetic pan (like cast iron or stainless steel) is placed on the surface, the magnetic field generates eddy currents within the pot’s metal, creating heat through resistance.
  • Direct Heating: Because the pan is the heat source, the cooktop itself stays relatively cool and wastes less energy compared to traditional stoves.

Key Advantages and Characteristics:

  • Safety: The cooktop surface does not heat up directly, reducing burn risks, and it will not turn on without a compatible pan.
  • Efficiency & Speed: Induction is faster, as water can boil 25-50% faster than electric or gas, and offers precise, rapid temperature changes.
  • Cookware Compatibility: Only ferromagnetic (magnetic) pans work; you can test this by holding a magnet to the base.
  • Easy Cleanup: Because the surface does not get extremely hot, food spills do not burn onto the cooktop
